One of my favorites is Zarafa Camp in the Selinda Reserve. They are actually claiming to be "the greenest luxury hotel in Africa." Currently, they use worm farms to help eliminate biodegradable kitchen waste, the entire camp is run on solar power, and the entire camp was built using one bag of cement. Pretty impressive!
